2 lbs beef stew meat, cut into 1" pieces
1 C thinly sliced onion
1-4 cloves garlic, minced
2 C beef broth (bullion okay)
1, 8oz can diced tomatoes
1 package of fresh mushrooms, whole or sliced
1/3 C BBQ sauce (any kind)
3 Tbsp cornstarch

Put everything into crock-pot (except cornstarch) and stir to combine.
Cook on Low for 8-10 hours

To thicken, just before serving:
Turn crock-pot to High
Blend cornstarch with 1/4 C cold water and stir until smooth,
Stir into stew and allow to cook until thickened and bubbly.

Serve over rice or noodles.
