2 tbsp Vegetable Oil
2 Onions, chopped and 2 Garlic cloves, minced
½ lb. Mushrooms, sliced and 1 Green Pepper, chopped
28 oz Tomatoes, cut up
14 oz Tomato Sauce (Hunts)
2 Carrots, shredded
½ cup Romano Cheese, grated
¼ cup Parsley
1 tsp each Basil and Oregano
1 tsp each Sugar and Salt
¼ tsp Black Pepper
1-2 bunches fresh Spinach
9-15 Lasagna noodles
2 Eggs
1 lb. each Ricotta Cheese and Mozzarella Cheese

Directions:

Cook onions, garlic, mushrooms & pepper in oil for 5 min. Add tomatoes, sauce, carrots & spices and bring to boil. Cover, reduce heat and simmer for 30 min.
Cook spinach with water on leaves only. Drain, squeeze all moisture out and chop finely.
Cook noodles, drain and rinse. Whirl eggs, ricotta and spinach until smooth.
Spread ¼ of tomato sauce on the bottom of the pan. Add a layer of noodles. Spread ½ the ricotta mixture, then ¼ of the tomato sauce, ⅓ mozzarella & parmesan. Repeat. Bake uncovered at 350ºF 30 min. Cover & bake an add'l 10 min.
