Strawberry spinach salad Recipe

1/4 cup toasted sliced almond
8 oz strawberries hulled and quartered
1/2 med cucumber sliced and cut in half
1/4 c red onion wedges and sliced thin
1 6oz pkg baby spinach

1 lemon
2 Tbl white wine vinegar
1/2 c Splenda or sugar
1 tbl olive oil
1tsp poppy seeds

Toast almonds in 350 oven for 10 minutes.
Hull and quarter strawberries
Score cucumber lengthwise. Cut cucumber in half lengthwise. Remove seeds
Slice both halves of cucumber.
Cut onion into wedges and thinly slice wedges

Place spinach in a large serving bowl.
Add strawberries, cucumber and onion.

Zest lemon to measure 1/2 tsp lemon zest
Squeeze lemon juice in small bowl.
Add lemon zest and remaining ingredients, whisk well.
Use immediately or refrigerate until ready to use.

Whisk dressing and drizzle over salad
Gently toss to coat
Sprinkle almonds and serve immediately
