1 C sugar

Pudding
1 qt. Milk or half and half
¾ sugar
⅛ tsp. Salt
1 tsp. Vanilla
6 eggs, well beaten

Directions:
Directions:
For sauce, cook sugar over low heat stirring until golden brown. Pour into molds up the sides.
Will harden, but then get soft again when flan is cooking.

For pudding, mix milk, sugar and salt. Boil vigorously for 10 min. Add mixture to the eggs, a little at a time beating constantly. Continue beating for 3 min. While mixture cools. Stir in vanilla.
Pour mixture into mold and cook in water bath (large pan half filled with water) in the oven for 1½ hours @300º, or until knife comes out clean when inserted into flan.
Chill in refrigerator and then unmold on a dish.
