2 or 3 eggplants, peeled and diced
2 cups cooked rice
1/2 cup bell pepper, chopped
Parsley, oregano and sweet basil, to taste
Bread crumbs
1 lb. ground beef
1/2 cup chopped onion
1/2 cup chopped celery
Butter (2 - 4 tbsp.)
Parmesan cheese

Directions:
Directions:
Preheat oven to 325º. Boil eggplants in salt water until tender. Brown meat. Drain excess fat. Saute onion, celery and bell pepper in butter. Mix meat and seasonings. Then add rice and eggplant mixture. Small amount of cheese and bread crumbs may be added to the mixture if desired. Pour in greased casserole dish. Top with cheese and bread crumbs. Bake for about 10 minutes.
