About 3 cups cooked chicken (I prefer to use rotisserie chicken with no special seasoning)
6-8 cups chicken broth
2 cups flour
2 Tbs. butter
1/2 tsp. baking powder
salt to taste
about 1 cup of milk, maybe a little less

Debone your chicken and cut in bite sizes you prefer and set aside.

Place your broth on the stove and bring to a boil. While waiting for the broth to boil, you can make the dumplings.

In a bowl, combine flour, baking powder and salt. Cut the butter into the dry ingredients with a fork or pastry blender. Stir in the milk while mixing with a fork until the dough forms a ball.

Flour your work surface, don't be stingy with the flour! Place the dough onto the work surface. Gently flour ball of dough. Do not knead. Roll out the dough until thin. Cut the dough into squares (I like to use a pizza cutter).

Once the broth is boiling, I take the dumplings and drop them one by one into the broth. Do not brush off the flour as this will help thickening your broth. Cook about 15-20 minutes or until they are not doughy tasting. If the broth is still too thin, I take some flour and add a little water to it to make a thinner version of a 'paste'. Don't make it too thin. I slowly pour this into the broth while stirring and this will thicken it. As it cooks longer, it will thicken as well. Add chicken and cook a few minutes to heat the chicken.

Serve with bread or biscuits.
