2 cups sugar
1 1/4 cup vegetable oil
1 can Libby's pumpkin
2 tsp vanilla
1 1/2 cup chocolate chips
3 cups flour
1 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1 tsp allspice
1/2 tsp cloves

Preheat oven to 325. Grease and line the bottoms of 2 4 1/2 x 8 1/2 loaf pans with parchment paper. Beat eggs for 1 minute on medium speed. Add oil, pumpkin, vanilla and sugar. Mix until all wet ingredients are combined. Add all dry ingredients and mix on low until just combined. Stir in chocolate chips (or leave out completely) and pour into prepared pans. Bake 55 to 60 minutes until a toothpick inserted in center comes out nearly dry. Do not over bake! Cool 5 minutes and remove from pans to finish cooling on a rack.

You can also make muffins or mini muffins with this recipe. Full size muffins take 20 to 25 minutes or until top springs back when lightly touched.
