8 large baking potatoes
4 slices thick cut bacon
1 medium onion
6 tablespoons butter
6 tablespoons flour
8 cups milk
Salt and Pepper - to taste (remember potatoes will soak up salt)
1 cup shredded cheddar cheese

Preheat oven to 375ºF

Wash the potatoes and pierce several times with a fork. Bake them for 45 minutes or until they are just soft. Remove them from the oven and let them cool. Peel the potatoes and cut into 1/2 to 3/4 inch pieces.

Meanwhile, place a paper towel on a microwave-safe plate and lay the bacon slices int the center. Place another paper towel on top and microwave on high for 2 minutes or until the bacon is crisp. Allow bacon to cool, then break into small pieces.

Peel the onion and dice finely. Place the onion and butter in a large saucepan and cook over medium heat, stirring occasionally, for 5-7 minutes or until translucent. Stir in the flour and cook for 1-2 minutes or until bubbly. Add 2 cups milk and stir until smooth. Add the remaining milk and the potatoes and cook, stirring occasionally, 7 - 15 mins, until it JUST begins to boil. Mash some of the potatoes into the pot to thicken to the desired consistency. Season to taste with salt and pepper. Decrease the heat to low and cook for 5 minutes. Ladle the soup into bowls and sprinkle the cheese and bacon bits over the soup,

My dear friend Tiffany Smith shared this recipe with me when she and I were single and didn't cook much. It was easy and super delicious. She had gotten it from a magazine and it was the recipe that Julia Roberts uses. Thus, we adopted it since we loved her movies and her! Turned out to be a staple in my kitchen and something easy to make for a crowd with crusty bread and a lovely salad.
