1 lb frozen peas
1 Cup diced celery
2 large carrots diced
1 large onion diced
1 Cup chopped tomatoes
3 diced potatoes
vermicelli
Cup olive oil
3 qts water
Cup grated ramano cheese
Salt and pepper to taste

Directions:
Directions:
Saute onions and diced potatoes in hot oil, about 10 minutes. Add tomatoes, salt and pepper, cover cook slowly for 15 minutes. In a separate large sauce pot bring to boil 3 qts of water. Add celery, peas and carrots cover and cook for 15 minutes or until tender. Add the saute'd vegetables and vermicelli broken into 1-2 inch pieces. Cover and cook over low heat for 20 minutes. Serve hot with garnish of grated ramano cheese.
