Cream of Broccoli Soup Recipe

2 Tbsp butter
2 stalks of celery, diced
2 large carrots, diced
1 tsp minced garlic
1 medium onion, chopped
4 cups fresh broccoli, chopped
2 cans diced potatoes, drained
1 can of cream of chicken soup
1 can cream of broccoli soup
16 oz low sodium chicken broth
1/2-2/3 cup milk or half and half

Directions:
Directions:
Heat butter in a large pot and add onion, celery and carrots and cook 3-4 minutes until softened. Stir in garlic and broccoli and cook 3 more minutes. Add potatoes, chicken broth and soups. Cover and simmer for 10-15 minutes until vegetables are soft. Remove 2/3 of the vegetables from pot with strainer and puree keeping all broth in pot. Add puree back to pot along with milk. Season to taste with salt and pepper. If soup is too thin, mix 2 Tbsp flour with 4 Tbsp of water and add to boiling broth, stirring a few minutes until thickened. Serve with shredded cheese.
