3 c. all purpose flour
1 t. salt
1 t. baking soda
1 t. baking powder
1 T. ground cinnamon
3 eggs
1 c. vegetable oil
2 c. white sugar
3 t. vanilla
2 c. grated zucchini

Directions:
Directions:
Grease and flour two loaf pans. Preheat oven to 325. Sift flour, salt, baking powder, baking soda and cinnamon together in a bowl. Beat eggs, oil, vanilla and sugar together in a large bowl. Add sifted ingredients to the creamed mixture and beat well. Stir in zucchini until well combined. Pour batter into prepared pans.

Bake for 50-60 minutes or until toothpick inserted into the center comes out clean. Let bread sit in their pans on a wire rack until slightly cooled. Then remove bread from pan to completely cool on rack.
