1 frying chicken, cut up
1 egg, slightly beaten
1 c milk
salt and pepper
1 1/2 c cracker crumbs
1/2 c butter
2 c hot milk

Directions:
Directions:
Combine egg and one cup of milk. Season chicken pieces with salt and pepper. Dip pieces in egg and milk mixture and roll in crumbs. Heat fat in a heavy skillet to make a layer one fourth-inch deep. Brown chicken on both sides. Add 2 cups of hot milk, cover and bake in a moderate oven 350 about 30 minutes or until tender. May also be prepared on top of the range.
