Sauce:
3 Tablespoons butter
1 Pound Sharp Cheddar Cheese, cut into 1"-2" pieces
1 Teaspoon dry mustard
3 Teaspoons flour
1 Cup Milk
1 Egg

Tomato Topping:
2 Whole Plum Tomtatoes
4-6 Tablespoons Butter
4-6 Teaspoons ground paprika

Serving:
8-10 Bread Slices, toasted (choice of bread - recommend sourdough, brioche or white)
Worcestershire Sauce

SAUCE:
1. Using double boiler, melt 3 tablespoons buter with cheese.
2. In separate bowl, combine dry mustard and flour.
3. Gently whip in the milk until smooth, then add to cheese mixture.
4. Beat egg in separate bowl.
5. When cheese mixture is fully melted, gently stir in beaten egg.

TOMATO TOPPING:
1. Prepeat oven to low broil.
2. Slice tomatoes and places slices on cookie sheet.
3. Place pat of butter on top of each tomato slice.
4. Sprinkle butter with ground paprika.
5. Place in prepeated oven and cook until butter is melted and tomatoes have softened.

SERVING:
1. Toast bread and set on serving plates.
2. Pour Rarebit sauce on top of toasted bread.
3. Place tomato slice on top of sauced bared.
4. Sprinkle Worcestershire Sauce, to taste, on top of prepared tomatoes.
