8 med. New Potatoes, cooked, cut into ¼" cubes and chilled (about 5 cups)
3 large stalks celery, cut into diagonal slices (about 2½ cups)
1 jar (4 oz) whole pimiento, drained and sliced
¼ cup Sweet Pickle relish
½ small Green Pepper, chopped (about 1/4 cup)
2 hard-boiled Eggs, chopped
½ cup mayonnaise
1-2 tbsp Prepared Mustard
1 tsp Seasoned Salt
2 hard-boiled Eggs, sliced
Celery leaves

Directions:
Directions:
Toss potatoes, celery, pimiento, relish, green pepper and chopped eggs.
Stir in mayo, mustard and seasoned salt and toss with potato mixture.
Garnish with egg slices and celery leaves.
