3 lbs small beets
2 c vinegar
1 c water
1/2 c sugar
4 sticks cinnamon
1 t allspice
6 whole cloves

Directions:
Directions:
Wash and drain beets, leaving small amount of stem at top. Don't cut beet roots away as the beets will "bleed" while cooking. 4-6 qt pan. Fill with water to cover beets. Cook until almost tender. about 25 minutes. Cool and peel, place in jars. Use 7" cheesecloth and put allspice, cloves, cinnamon in center, tie into a bag. Combine vinegar, water and sugar in pan. Bring to boil slowly. Simmer and cook uncovered for 5 minutes. Use 1/2 or pint jars. Pour over beets leaving 1/2 inch head space, seal jars and cook in cold water bath for 30 minutes. (Can also be used for carrots)
