7 cups Granny Smith apples
1 20 ounce can crushed pineapple
1 cup sugar
2 eggs
2 tbsp flour
1 tbsp vinegar
1 8 ounce Cool Whip
2 cups chopped unsalted peanuts

Directions:
Directions:
Drain pineapple and save juices. Dice apples into pineapple juice (do not need to peel apples).

Mix sugar, flour, eggs and vinegar well. Cook in microwave until pudding mixture (stir every minute for about 3 minutes). Cool well, fill with Cool Whip. Combine drained apples, pineapple and Cool Whip mixture and then mix in nuts. Sprinkle ½ cup nuts on top of salad.
