4 Chicken Thighs
4 Chicken Breast
Large Vidalia Onion
Garlic
Garlic Salt
Pepper
10 Potatoes Cut in Quarters
Olive oil
Chicken Stock

Directions:
Directions:
Rinse chicken and pat dry. Cut up poºtatoes and onion and add salt, pepper, garlic and olive oil to the potatoes. Marinate the chicken in the same spices. Add potatoes to and oven proof dish and place the chicken on top. Add about 1 cup of chicken stock. Cover with foil and bake at 375º for 45 minutes. Uncover and cook another 15 minutes until chicken is cooked through to 165º.

The first time I made this recipe, Nonna told me to wash the chicken, so I got a scrub pad and dish soap out and started to wash the chicken. When she saw the bubbles, she asked what I was doing and I told her I was washing the chicken. We had a good laugh and often would laugh throughout the years about this. I have told many people this story about my early cooking experience.
