1 lb chicken or shrimp
3 cups uncooked white rice
1-2 tbsp garlic
1-2 tbsp ginger
1/4 cup real butter
1 tbsp olive oil
1 large onion
1/2 cup frozen peas /carrots
(I buy frozen peas/carrots in one bag)
4-6 eggs
4-6 tspsoy sauce
1 cup or 2 fist fulls of shredded cabbage (optional)
Salt and pepper to taste

Cook 3 cups white rice. Set aside. (Per Tannie, fried rice cooks better with day-old white rice. Make a day early if possible but not necessary.)
chop 1 lb boneless/skinless chicken breast or shrimp into bite size pieces, cook and set aside. Salt and Pepper to taste.

Cook chopped onion in 1 tbsp olive oil and 2 pats of butter.
Add 1-2 tbsp garlic and 1-2 tbsp ginger to olive oil, butter and onions.
.hile that is cooking. Scramble eggs in their own pan and set aside.

Cook onions until they are clear.
Add cooked white rice to cooked onions.
Fold rice into onions, butter, olive oil, ginger and garlic to flavor and coat the rice.
Add 1/2 cup frozen peas /carrots (add more if you like)
Add eggs and chicken or shrimp
Add soy sauce. Drizzle over the entire pan of rice. Stir. If rice is still white, add more soy sauce.
Taste as you go or it will be too salty if you add to much soy sauce.
Add 1 cup or 2 fist fulls of shredded cabbage (optional).
