8 chicken thighs, diced
2 T olive oil
2 carrots diced
1 small onion diced
5 T flour divided
1/2 tsp rosemary
1/2 tsp thyme
1/4 tsp sage
salt and pepper to taste
1 1/2 c potatoes peeled and diced
1/2 red pepper finely diced
1/4 c white wine
4 c chicken broth
1 c green beans
1/2 c heavy cream

IN LARGE POT OR DUTCH OVEN, BROWN CHICKEN IN 1 T OLIVE OIL. REMOVE FROM POT AND SET ASIDE.

COOK ONION, CARROT AND CELERY IN REMAINING OLIVE OIL FOR ABOUT 3 MINUTES OR UNTIL ONION IS SLIGHTLY SOFTENED. STIR IN 3 T OF FLOUR, SEASONINGS AND SALT AND PEPPER. COOK OVER MEDIUM HEAT FOR ABOUT 2 MINUTES.

ADD POTATOES, RED PEPPER, WHITE WINE, BROWNED CHICKEN AND BROTH. BRING TO BOIL AND THEN REDUCE HEAT AND SIMMER COVERED FOR 30 MINUTES.

REMOVE LID AND STIR IN GREEN BEANS AND CREAM. THICKEN IF DESIRED AND THEN SIMMER FOR AN ADDITIONAL 10 MINUTES.

TO THICKEN TAKE A MASON JAR AND COMBINE REMAINING 2 T FLOUR AND 1 C WATER OR BROTH. SHAKE WELL AND ADD A LITTLE AT A TIME TO BOILING STEW TO REACH DESIRED CONSISTENCY.
