FOR THE SOUP

1 lb ground beef
1 1/2 c fire roasted corn canned or frozen
1 med onion diced
1 15oz can kidney beans drained and rinsed
1 7oz can green chilies
1 14.5oz can fire roasted diced tomatoes
1 15oz can tomato sauce
2 c beef stock
1 pkg taco seasoning

FOR THE TOPPINGS
Avocado
Cheese
Cilantro
Sour cream
Tortilla chips

BROWN BEEF IN A MEDIUM SKILLET OVER MEDIUM-HIGH HEAT. DRAIN OFF FAT, AND TRANSFER TO SLOW COOKER.


ADD THE REMAINING SOUP INGREDIENTS, STIR TOGETHER AND COOK ON LOW FOR 6-8 HOURS OR UNTIL THE ONIONS AND BEEF ARE TENDER.

LADLE INTO BOWLS AND TOP WITH CHEESE, SOUR CREAM, AVOCADO, CILANTRO AND TORTILLA CHIPS
