Vodka Chicken Milanese Recipe

4 Chicken cutlets approximately 1 pound, pounded to 1/2 inch thickness
Salt and pepper to taste
1 1/2 cups of vodka sauce (see recipe below ).
1/2 cup of Italian style bread crumbs
1/4 cup of olive oil , plus more if needed
3 cloves of garlic minced
1/4 cup of grated Parmesan and Asiago cheese


Vodka Sauce
3/4 Cup of heavy cream
1/4 cup water
1 Recipe of marinara sauce . Add 1/4 cup of good vodka to sauce and the heavy cream. Add Bring sauce to a boil over med -high heat . Let simmer for 5 minutes . Allow to cool until ready to use on chicken.
Sprinkle cheese on top of chicken and serve hot

Season chicken with salt and pepper then coat with 1/4 cup of sauce. Spread the bread crumbs on a large rimmed baking sheet. Dredge the chicken in the bread crumbs to evenly coat. Put the chicken in the fridge for 10 to 15 minutes before frying.
Heat oil in a large skillet over medium heat. When the oil is hot shake excess crumbs off chicken cutlet. AQdd to the hot oil. Repeat with the remaining chicken. If can not fit all 4 pieces in the pan without crowding work in batches, adding oil as needed,
Cook turning once until golden brown on both sides and cooked through in the center about 5 to 8 minutes, Transfer to paper towels to drain,
Wipe out the skillet and add the remaining 1 cup of sauce. Heat over medium heat until bubbling . Divide among serving plates and top with the chicken and serve hot.
