1 large cucumber, peel and remove seeds
1 bell pepper
1 large carrot
1 small onion
1 envelope unflavored gelatin
1 c. mayonaise
Salt and pepper, to taste

Directions:
Directions:
Grate vegetables coarsely, except onion, which is finely grated. Squeeze out the natural juices, saving 2 tablespoons.
Soften gelatin in the reserved 2 tablespoons of juice.
Melt in a double boiler until gelatin is completely dissolved.
Add to grated vegetables. Add mayonnaise and mix. Add seasonings to taste.
Refrigerate overnight before using.
Makes about 3 dozen party sandwiches.

Mom would always coat both insides of bread with a thin layer of margarine. Then put a small piece of parsley in the middle of the sandwich (put a little "dent" in, then place the parsley in the dent.)
Also, to make a "fancier" sandwich, use a biscuit cutter or cookie cutter for special shapes.
