2 Tbs oil
1 lb ground beef
1 chopped onion
2 eggs
1 10 oz package frozen spinach
salt and pepper
1/4 c parmesan

Directions:
Directions:
Heat oil in a 12" skillet over medium-high heat. Add onion; cook until soft, about 5 minutes. Add ground beef and cook, stirring, until browned and all moisture evaporates, about 10 minutes. Add spinach (press water out); cook until heated through, about 2 minutes. Add eggs; cook until eggs are cooked and mixture is slightly dry, about 4 minutes. Season with salt and pepper; sprinkle with Parmesan.

OJ's was a restaurant downtown. Sarah used to ask to go there for her special birthday dinner. They had a big aquarium full of colorful fish. On one birthday occasion, the waiter let Sarah name one of the fish. This dish was one of the specials. It was just as good at home!!!
