1 cup of flour
2 eggs
2 Tbs water
Shredded Mozzerella

Filling:

3 lb whole milk Ricotta
3 eggs
3 Tbs chopped parsley
1 Cup grated parmesan cheese
1 tsp salt
1 tsp pepper

Mix all ingredients - batter should be fairly thin - if not add more water
Using a small crepe pan make thin crepe and set aside to cool

Filling:
Mix all ingredients - taste to check salt/cheese -add if necessary

Assemble:
Fill each crepe with full tablespoon of Ricotta, add shredded mozzarella
Fold over sides and "seal" with a bit of filling

Place in baking pan add sauce and bake about 20-25 min. at 350' F
