2 c. crushed tortilla chips
1 c. shredded cheddar cheese
1 c salsa or enchilada sauce
2 eggs, lightly beaten
1 envelope taco seasoning
2# hamburger

Topping:
1/2 c ketchup
1/4 c brown sugar
2 T Louisiana hot sauce

Make meatloaf with above ingredients.

Bake at 350º for 1 1/2 hours.

We’ve also used this to stuff peppers. With that, we added another can of enchilada sauce to pour over the peppers for baking.
