1 500 ml. package of dry white beans (about 2¼ cups) (can sub navy beans)
1 medium onion, diced
1 284 ml. can condensed tomato soup
⅔ cup brown sugar
1 tsp. salt
1 tbsp. dry mustard
2 tbsp. cocoa powder
½ pound uncooked bacon, cut into 1" pieces

In a large pot or if doubling the recipe, a roasting pan, soak the beans and onions overnight with enough water to cover the beans by ½". DO NOT DRAIN

Bring the beans to a boil and cook until the beans are semi soft, adding more water if necessary.

Preheat oven to 300º

Add all remaining ingredients to the bean mixture. Bake, uncovered 3 to 4 hours, stirring every hour or so.

DAD/Papa Middleton always volunteered to bake these for all our large family gatherings, always doubling the recipe. What little were left over were quickly spoken for.

The Winnipeg Free Press was asking for Baked Bean recipes which I submitted and it was published. The Testers Notes: "Love, Love the addition of cocoa in these hearty thick baked beans. Here, cocoa does not taste like chocolate but just gives a terrific dark flavour."
