2 c. sugar
3 c. whole wheat flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
¼ tsp. baking powder

2 eggs, beaten
1 c. vegetable oil
2 tsp. vanilla
2 c. raw, shredded zucchini
***********************************************
¾ c. nuts
¾ c. raisins

Directions:
Directions:
Combine sugar, flour, salt, cinnamon, baking soda, and baking powder.
In another bowl, combine eggs, oil, vanilla, and zucchini.
Add wet mixture to dry, mixing until just combined.
Fold in raisins & nuts, if desired.

Pour into 2 greased & floured 4½" x 8½" loaf pans
Bake for 1 hour at 350ºF

Our garden provided so much zucchini, we were sick of it. We literally had zucchini everything! But mom would shred and then freeze some of the zucchini, and make this in the dead of winter.
