1 refrigerated, unbaked pie crust
1½ cups (6oz) shredded mozzarella cheese
5 roma or 4 medium tomatoes
1 cup loosely packed fresh basil leaves
4 cloves fresh garlic
½ cup mayo or salad dressing
¼ cup grated Parmesan cheese
⅛ tsp. ground white pepper
Fresh basil leaves (optional)

Place pie crust in a 9" quiche dish or glass pie plate. Flute the edge. Prebake according to package directions. Remove from oven and sprinkle with ½ of the mozzarella cheese. Cool on a wire rack.

Cut tomatoes into wedges; drain on paper towels. Arrange tomatoes on top of melted cheese in the baked pie shell.

Combine basil and garlic in a food processor until coarsely chopped. Sprinkle mixture over tomatoes.

In a mixing bowl, combine remaining mozzarella, mayo, Parmesan cheese and pepper. Spoon cheese mixture over the basil mixture to evenly cover the top.

Bake in a 375º oven for 35 minutes or until top is golden brown and bubbly. Serve warm.

If desired, sprinkle with shredded basil leaves.
