Chocolate Mint Cake


Ingredients:

3 cups cake & pastry flour
1 cup cocoa
1 Tbsp baking powder
1 tsp salt
1 cup butter at room temperature
3 cups sugar
3 eggs
1 ¾ cups milk
½ tsp peppermint extract

Directions:
Directions:
1. Sift flour, cocoa, baking powder and salt together.
2. Cream butter and sugar together in large mixing bowl. Add eggs, one at a time, beating after each addition until light and fluffy.
3. Add dry ingredients alternately with milk and extract. Make 3 dry and 2 liquid additions, combining lightly after each.
4. Turn batter into a greased and floured 9 inch Bundt or tube pan.
5. Bake in a 325ºF oven for 65 - 75 minutes, or until a toothpick inserted in the centre comes out clean.
6. Cool in pan for 10 minutes, then turn out onto wire rack to cool completely.
 

Peppermint Glaze

2 cups sifted icing sugar
1 Tbsp soft butter
1/2 tsp peppermint extract
2 - 3 Tbsp hot water
Green food colouring
Red and green glace cherries

1. Combine icing sugar and butter in a small bowl. Add extract and enough hot water to make a pourable glaze. Add green food colouring.
2. Drizzle over cooled cake. Decorate with glace cherries.
