unpeeled red potatoes - up to 5 lbs.
5-6 hard boiled eggs
mayonnaise (Kim uses Hellman's)
mustard
cubed dill pickles - cut up from large dills - don't use the ones already cubed in the jar
salt and pepper

Directions:
Directions:
Boil potatoes until done but not mushy
Peel potatoes when cool enough to handle and cut into cubes of the size you want
Add mayo, mustard and pickles - I use more mayo than mustard, but you can do it to taste.
Some people like more or less pickles so use the amount you like.
Add salt and pepper to taste.
Garnish with sprinkled paprika on top.
Store in refrigerator.

The great part of this recipe is you can alter the amount and proportions of ingredients to your taste. I like a lot of pickles, more mayo and less mustard but you can alter it for your taste.
