3 cups old fashioned oats
1 cup whole wheat flour (or all purpose if you don't have whole wheat)
1 tsp baking soda
1 tsp baking powder
1/2 tsp coarse salt
1 cup packed brown sugar (dark or light is up to you)
1 cup white sugar
2 sticks softened butter
1/2 cup peanut butter
2 eggs
1 tsp vanilla extract
2 cups semisweet chocolate chips

Directions:

Preheat oven to 350º.
Line a baking sheet with parchment paper and set aside.
Stir together oats, flour, baking soda, baking powder, and salt in a medium bowl and set aside.
Using an electric mixer, mix sugar, butter, and peanut butter on medium-high until pale and fluffy.
Mix in eggs and vanilla.
Reduce speed to low and add in oat mixture.
Mix until just combined.
Mix in chocolate chips.
Drop 1.5 inch balls of dough on baking sheet, spaced 2 inches apart.
Bake cookies until golden brown, 13-15 minutes.
Rotate baking sheet halfway through baking.
Let cookies cool at least 5 minutes before transferring off of cookie sheet.
