Ground round 85/15 (1 - 2#)
Converted rice
Granulated garlic
Onion powder
S & P
Parsley
1 egg
onion minced or fine dice
large can tomato soup
Large can tomato juice

Directions:
Directions:
Mix tomato soup and tomato juice in a bowl. Add parsley.
Mix ground beef, 1 C rice for 2#, seasonings, onion, egg and about ⅓C of tomato mixture

If using green peppers core and seed them. Blanch in boiling water for 1 minute to take out the bitterness
If using red peppers they are sweet already
If using nothing, just form the meat into balls. Hence the name porcupine balls.
Cover with remaining sauce and bake 350 for 45 minutes

This is one of Kassie's favorite. After 20 years dad told us he doesn't like stuffed peppers but I made them consistently over the years which was funny. We would eat the peppers and you kids would have the balls.
