1 1/2 lbs. 99% lean ground turkey

2 tbsp. diced onion

2 garlic cloves, minced

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 jalapeno pepper, diced (optional)

2 tsp olive oil

1 - 28oz diced tomatoes

1 cup water

1 1/2 tsp ground cumin

2 tsp chili powder

1/4 tsp crushed red pepper flakes

1/4 tsp salt

toppings: (per serving)

2 tbsp chopped scallions (1/2 cup total)

1.5 oz avacado, diced (6 oz total)

2 tbsp low-fat plain greek yogurt (1/2 cup total)

3 tbsp low-fat shredded cheddar cheese (3/4 cup total)

Directions:
heat large soup pot over medium-high heat and saute the onions, garlic and peppers in oil for about 4 to 5 minutes, or until tender. add the turkey, and cook until turkey browns and is no longer pink.

pour in the tomatoes, water, cumin, chili powder, red pepper flakes, and salt; mix until well blended. cover, and simmer on low for about 20 minutes.

serve with toppings.
