Preheat oven to 350 degrees.

Rinse turkey inside and pat dry (including inside). Put salt, pepper and poultry seasoning on outside of turkey. Rub melted butter all over turkey.

Release legs from oven safe plastic clamp. Add stuffing and rejoin legs with plastic clamp. Place turkey on rack in roasting pan. Tuck wings under back of turkey. Add 1/2 cup of water in bottom of pan.

Place a tent of aluminum foil loosely over turkey. This eliminates the need to baste and prevents excessive browning.
Remove foil after 1 to 1 1/2 hours for browning. Roast at 350 degrees until meat thermometer at 165 degrees. Do not go by pop up thermometer. Temperature must be 165 degrees.

18 - 20 lb stuffed turkey: Bake for 4 1/2 to 5 1/2 hours
20 - 22 lb stuffed turkey: Bake for 5 to 6 hours

When turkey is removed from oven take stuffing out immediately.
