Ingredients: Andouille sausage (I use 4 links) 1 pound gumbo shrimp (frozen,deveined, peeled, tail off) 1/2 pound frozen okra white rice 1 box Zatarain's gumbo mix

Directions: |
Directions:in a large pot mix 6 cups of water and the gumbo mix until well blended. I add a few extra hands of rice although the mix does have some in it. Stir in the sausage that has been cut into bite size pieces and the frozen pieces of okra. Cover and bring to a boil, then simmer for about 1/2 hour. When that is done add the shrimp. The shrimp is done when it is pink and no longer opaque. Do not overcook the shrimp as it will get tough. Stir and simmer for a few minutes to let all the flavors meld, then remove from heat and let sit for 5 minutes.
Andouille sausage gives it some space as well the gumbo mix. You can use chicken instead of shrimp if you like. |

Notes: I don't usually make spicy food because Zada doesn't like it but he loves this gumbo, The Zatarain's gives it just the right spice but if you prefer hotter you can add additional Cajun spice.
