2 cups flour
1 t. baking powder
1 t. baking soda
1 t. cinnamon
¼ t. salt.
1 ½ cups oil
2 cups sugar
4 eggs
2 cups finely grated carrots
nuts can be added too

Frosting:
½ cup oleo
1 8 oz. package of cream cheese
1 box of powdered sugar
1 t. vanilla

Directions:

Preheat oven to 350º.
Sift together flour, baking powder, baking soda, cinnamon and salt; set aside.
Combine oil and sugar. Mix well.
Add 4 eggs; one at a time beating well after each egg.
Gradually add dry ingrediants; mixing well.
Nuts would be added at this time as well if desired.
Bake in 3 8 inch layer pans which have been greased and floured.
Bake for 50-60 minutes.
When cool, frost with cream cheese frosting or sprinkle with powdered sugar.

For Frosting:
Mix oleo and cream cheese until light .
Add sugar and beat.
Add vanilla.
(½ of this recipe is enough to frost a 2 layer cake)
