4 c chicken broth divided
1 1/2 c uncooked long grain rice
2 c chopped onion
2 c chopped celery
1/2 c butter
2 cans mushrooms stems and pieces drained
3 T minced parsley
1 1/2 to 2 tsp poultry seasoning
3/4 tsp salt
1/2 tsp pepper
Fresh sage and thyme, optional

IN A SAUCEPAN BRING 3 1/2 C BROTH AND RICE TO BOIL. REDUCE HEAT; COVER AND SIMMER FOR 20 MINUTES OR UNTIL RICE IS TENDER. MEANWHILE IN A SKILLET, SAUTE ONIONS AND CELERY IN BUTTER UNTIL TENDER. STIR IN RICE, MUSHROOMS, PARSLEY, POULTRY SEASONING, SALT, PEPPER AND REMAINING BROTH. POUR INTO A GREASED 13 X 9 IN BAKING DISH. BAKE UNCOVERED AT 350* FOR 30 MINUTES. GARNISH WITH SAGE AND THYME IF DESIRED.
