1 thin crust Boboli pizza crust
1/2 to 1 cup spicy peanut sauce
1`to 2 cup cooked chicken, diced or shredded
1 to 2 cup mozzarella, shredded
1/4 cup green onions, sliced
2 Tbsp bean sprouts
1/4 cup shredded carrot
1 Tbsp chopped peanuts
chopped Cilantro

Preheat oven to 425 degrees.

Spread crust with approx. 1/4 cup of spicy peanut sauce. Top with 3/4 cup mozzarella cheese. Toss chicken with enough peanut sauce to coat. Add to top of cheese. Sprinkle green onions, bean sprouts, and carrots on top of chicken. Add more mozzarella. Top with a sprinkling of peanuts.

Bake 8 to 12 minutes until cheese is melted.
Top with chopped cilantro and serve.

I first tasted California Pizza Kitchen Thai Chicken Pizza while working in Chicago back in 1990 and I was blown away. Back then, the only pizza I knew was cheese and sausage. I had no idea a pizza could be this much fun! This is as close as I can get to the CPK pizza. I've only used store bought jarred spicy peanut sauce. I'll bet you could make your own with some Pb2 and cut some fat out of this dish.
