1 1/2 cups vanilla wafers, crushed (about 50 cookies)
1/2 cup butter
3 lemons, juiced
1 14-ounce can sweetened condensed milk
3 eggs
4 tablespoons sugar

Directions:
Directions:
Preheat oven to 325º.

Crush vanilla wafers using a food processor or by placing the cookies in a zip top bag and using a rolling pin. Combine the cookie crumbs with melted butter. Press into the bottom and sides of a glass pie plate to form the crust. If desired, line the sides of the pie plate with vanilla wafers.

Separate the eggs, with whites in one bowl and yolks in another. Combine the egg yolks, lemon juice, and sweetened condensed milk in a large bowl. Mix well. Pour into crust.

Beat the egg whites until white and frothy. Add sugar and continue beating until soft peaks form. Spread egg whites on top of filling to make a meringue, being sure to cover entire pie to the crust. Bake for 15 minutes or until the meringue is just starting to turn golden brown.
