1 medium cauliflower
50 ml butter
50 ml chopped onion
25 ml flour
500 ml chicken broth
500 ml of milk or light cream
5 ml Worcestershire sauce
4 ml salt

Directions:
Cut cauliflower into small florets; place in a saucepan with 250 ml boiling water. Cover an return to a boil; reduce heat and simmer for 10 minutes. Drain, reserving liquid.

In a large saucepan, melt butter; add onion and cook until soft. Blend in flour, then add chicken broth. Stir over medium heat until sauce is creamy. Add reserved cauliflower liquid along with milk, worcestershire sauce and salt.

Add cauliflower and bring just to a boil, stirring occasionally. Remove from heat.

When serving, sprinkle grated cheddar cheese on top.

Note that this recipe is in metric measurements. That's because it's one of my 'newer' recipes, from a Canadian Living magazine . it's another one of the comfort soups for me and one of Molly's favorites!
