3/4 cup juice from cherries
3/4 cups sugar
1 1/2 T quick-cooking tapioca
2 1/2 cups drained, canned, pitted tart red cherries

Few drops red food coloring
Pastry for 9" lattice top pie
1 T. butter

Directions:
Directions:
Combine juice, sugar, tapioca, cherries, food coloring, and dash salt; let stand 20 minutes. Line 9" pie plate with pastry; fill with cherry mixture. Dot with butter. Adjust lattice crust; or full crust; crimp edge high. Bake in a very hot oven 450º for 10 minutes. Reduce heat to 350º; bake about 30 minutes more.

1. Use as little liquid as possible. Do not over mix the mixture.
2. cut the shortening in a uniform texture and not too small or too large.
