2 T. soy sauce
⅛ tsp. ginger
⅛ tsp. cayenne pepper
1 T. oil, divided
¾ lb. medium shrimp
1 c. frozen peas, thawed
⅓ c. sliced green onions
1 (8 oz.) sliced water chestnuts, drained
1 c. cooked rice, chilled
2 T. Sliced almonds, toasted (parsley)

Directions:
Directions:
Combine first 3 ingredients and set aside. Heat 2 tsp. oil over Med-high heat, stir fry shrimp - 30 seconds. Add peas, onions and water chestnuts, stir fry - 2 minutes. Add soy sauce mixture and stir well, remove from skillet. Add Rice to 1 tsp. oil, stir fry - 2 minutes. Return shrimp mixture, stir fry - 1 minute. Sprinkle with sliced almonds (parsley).
