Brown ¼ lb salted lard (or bacon) and ½ lb ham in 2 T each oil and butter with 10-12 small onions. When brown, remove from pan. In same fat, brown 2 chickens cut up. Add 1 C. cognac and flambé. Add 2 T flour, brown. Add onion powder, pepper, bacon (or lard), parsley, ½ t. thyme, 2 bay leaves, 1 bottle red wine.
When it boils, reduce the heat and simmer until tender, about an hour.

Serve with generously buttered rice with mushrooms.
