1 onion peeled and cut into bite size pieces
1 leek sliced
4 - 6 cloves of garlic minced
1 small eggplant or 2 small zucchini cut into bite size pieces
8 oz of sliced mushrooms or whole mushrooms cut into quarters
1 green bell pepper
1/2 red pepper
1 stalk broccoli or broccoli stalks cut into bite size pieces
1 24 oz jar of pizza sauce - something good not Prego or Ragu

Saute onion in olive oil until soft. Add garlic and leeks and saute an additional minute or two. Add all other vegetables and pizza sauce. Simmer covered 20 minutes then uncovered until desired consistency is reached.
