1 c. shortening
1 c. sugar
1 c. brown sugar, packed
2 eggs
2 c. flour
tsp. baking powder
1 tsp. baking soda
tsp. salt
1 tsp. vanilla
tsp. almond extract
1 c. rolled oats
1 c. flaked coconut
1 c. raisins
1 c. chopped dates
1 c. nuts

Cream together shortening and sugars. Beat in eggs until fluffy. Add remaining ingredients and mix well. Drop onto cookie sheets. Bake at 375 F for 12-14 minutes.

My Grandma B (Kay Bindbeutel)would often make these and bring them up when visiting. I have substituted or added other dried fruit like apricots, cherries & cranberries to make more of a fruit medley.
