1 cup sugar
2 T flour
3 T cornstarch
1/4 tsp salt
1 1/2 cup water
2 lemons, juiced and some zest
2 T butter
4 egg yolks
9" pie shell, baked

Meringue:
4 egg whites
1/2 tsp cream of tarter
1/2 cup sugar

Directions:
Directions:
Whisk together the sugar, flour, cornstarch and salt. Stir in the water, lemon juice and zest. Cook over medium heat, stirring frequently, until mixture comes to a boil. Stir in butter. Whisk egg yolks in a small bowl and gradually stir in 1/2 cup of the hot mixture. Now whisk all of the yolk mixture back into the remaining hot mixture. Bring to a boil and continue to cook while stirring constantly until thick. Remove from heat and pour into a baked 9" shell. Cover with meringue made from the egg whites, cream of tartar and sugar. Bake at 350º about 15 minutes until nicely browned.
