2 cups flour + 1 tbsp. to coat blueberries
3/4 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1/2 cup butter, room temp.
1 cup mashed bananas ( approx. 3)
2 eggs
1 tsp. vanilla
1/3 cup vanilla or plain yogurt
1.5 cups fresh blueberries (save some for the top)
Optional additions: lemon or orange zest, chocolate chips, almonds. coconut

Directions:
Directions:
Combine flour baking soda and salt in a bowl. In a separate bowl beat sugar and butter with mixer at medium speed until fluffy and well blended. Add mashed bananas, eggs, yogurt, and vanilla. Beat until blended. Add flour mixture. Beat on low until moist. Place blueberries in a bowl and toss with flour. Gently fold blueberries into batter. Spoon batter into loaf pan coated with cooking spray. Press additional blueberries on top. Bake 60-70 mins. or until wooden pick inserted in the center comes out clean. Cool bread in pan 10 mins. then remove and cool completely on cooling rack.
