1 - 1/2 lb. fresh Mahi-Mahi - salt & pepper to taste

1 cup flour
1 tsp. each: salt & pepper, onion and garlic powder

2 eggs
1 can (13 1/2 oz.) coconut milk

1 cup panko bread crumbs
1/2 cups shredded coconut

Directions:
Directions:
Cut seasoned Mahi-Mahi to serving size. Combine flour, salt, pepper, onion powder & garlic powder. Mix eggs with coconut milk. Combine panko bread crumbs and shredded coconut.

Dredge Mahi-Mahi into egg mixture - then the flour mixture.
Dredge Mahi-Mahi back into the egg mixture again.
Dredge Mahi-Mahi into panko & coconut flakes last.

Place on greased (or) foiled cookie sheet. Bake @ 375 for 20-30 minutes until done.
