30 Ripe tomatoes
16 Large onions
2 Red peppers
2 cups sugar
3 T salt
4 1/2 to 5 cups vinegar (according to strength)

Directions:
Directions:
Scald tomatoes, peel and quarter, put into large heavy kettle. Skin onions and grind coarse, add the tomatoes, also add ground peppers and other ingredients. Cook 1 1/2 hours or until well cooked down. Add 1 tsp. each of ginger, cinnamon, cloves, celery seed and mustard. Cook 1 hour longer.
