1 large onion chopped
1/2 cup chicken stock
1/3+ frozen orange juice concentrate
6 garlic cloves chopped or minced
2-3 chipotle chiles in adobe sauce plus 2-3 Tbsp sauce
2 Tbsp apple cider vinegar
1+ Tbsp tomato paste
1 and 1/2 tsp salt
1 tsp Mexican oregano
1 tsp ground coriander
1/4 tsp black pepper
1/4 tsp ground cinnamon
1 boneless pork butt (about 4 pounds) or bigger with bone in

cilantro, chopped onion or scallions, queso fresco, lime wedges for toppings

In a blender or food processor, puree all until smooth.

Place pork butt in slow cooker. Pour seasoned mixture over the pork. Cook pork on high until the pork is tender and shreds easily with a fork--about 8 hours. Yes, eight hours or more.

Serve with warm tortillas and garnishes.

This is a great recipe for the chief holiday cook. It makes alot (you can buy a bigger butt or pork shoulder), tastes great room temperature so your family can eat whenever they get hungry, and of course, you can make ahead!

The chipotle chiles and adobe sauce are the key ingredients. No substitutions.
